Yep, each night executive chef Frank Stagnaro prepares Seared Hawaiian Snapper that arrived 24 hours earlier from Hawaii that was hand selected by Honolulu Fish Company.
Freshness and ecologically responsible business practices are critical to Edgewood. Honolulu Fish Company’s buyer hand-selects product exclusively for Edgewood each morning at 5:30 am, checking the texture, color, and maturity of each fish, ensuring the seafood has reached reproductive maturity.
And even better, to maintain environmental sustainability and responsibility, the company only buys from fishermen who use hooks or long lines, never nets and trawls which can cause damage to the environment. The fish is then vacuum-wrapped in the company’s proprietary, award-winning package system to keep products cold and fresh without freezing.
